Ingredients

  • 1.5kg ground beef
  • 10 Light Sourdough Gourmet Bun
  • Mixed seasonal lettuce

Aioli:

  • 2 egg yolks
  • 1 teaspoon mustard
  • 1 teaspoon apple cider vinegar
  • 100ml olive oil
  • 3 cloves crushed garlic
  • Salt and pepper

Wild garlic pesto:

  • 75g wild garlic leaves, washed
  • 150g roasted, crushed sesame
  • 30g parmesan
  • 100ml extra virgin olive oil
  • Salt and pepper

Tomato relish:

  • 1 kg tomatoes, skinned and chopped
  • 2 red onions, chopped
  • 3-4 sprig thyme
  • 50ml tomato juice, concentrate
  • 3 tablespoon wine vinegar
  • 3 tablespoon brown sugar
  • Salt and pepper

Serve with: Mashed potatoes, fries, chili-fries, root vegetable-fries, tortillas chips, onion rings or a garden salad.
