DJ BBQ - Oklahoma ‘Smash’ Cheeseburger, in an Americana Brioche Bun
2 x 90g Ground Beef 20% fat
2 x Monterey Jack Cheese slices
1 x Large Sweet White Onion - very finely sliced
6 x strips of Streaky Bacon – cooked until crisp
American Yellow Mustard
Iceberg Lettuce - finely sliced and chopped
Mayo - for the bottom bun
Ketchup - for the top of the bun
Pickles – sliced
Salt & Pepper
One of my favourite toppings for a burger is grilled onions. That savoury sweet, with a slight bit of tangy flavour, pair perfectly with a beautifully grilled cheeseburger. Umami heaven in a bun! This is easily one of the most fun burger recipes to create. You get to smash stuff! Who doesn’t like smashing? Alright, here we go.
Use a frying pan, skillet, or plancha as your cooking surface on a hot heat. Place the meaty balls in the pan, season with salt and pepper, sprinkle liberally with the sliced paper thin onions and smash them flat with a large spatula.
Once the onions are caramelising and a bit of moisture is showing on the top of the patty, give them a flip and brush on the American yellow mustard – elevating to the upper echelons of tasty town. Do the same for the other side. Just a light layer works as you want to cook the mustard into the patty. Next, top with the cheese. Then toast your bun!
I’ve chosen a classic Americana Brioche Bun here as it is perfect for this ultimate cheeseburger. Toasting the bun will provide a barrier for all those juices and hold the finished burger together.
Now prepare for the build. Start with a mayo base, followed by finely chopped iceberg lettuce. Next, place the patties on the bed of chopped lettuce. Top with the crispy bacon, a couple of pickle slices and a squirt of ketchup. Bring the tang!!!!!! No need to go with more mustard as you already cooked it into the patty.
Boomtown. Onions rock!!!! Whoooooohoooooooooooooo!!!!
